Abstract: Nowadays, consumer demands for greater food variety and availability have led to increased fresh, green, and clean consumption behavior. This trend has also been associated with increase in a number of nonthermal or minimally processing food industry. Novel product development poses several concerns such as safety, quality and the regulations which required the approval from the Food and Drug Administration (FDA). Ensuring safe and quality food has become a more complex task and is the need of hour. The innovation of food industry has thus reached new levels by focusing on product safety, consumer demands, and government regulations to produce food which is free from microbiological contaminants. Several non-thermal technologies have been tested to improve food quality while preserving microbial safety of the product. High-pressure processing (HPP) is one of novel processing techniques which passes approval by Thai FDA. Industrial manufacturers who would like to implement HPP in their processes must therefore surpass the involved regulations. This section describes the related FDA regulations and the industrial implementation of HPP technology concerning clients’ experience towards novel food product innovation.
