Abstract: | Development of healthy rice crackers by Quality Function Deployment (QFD) is an innovative approach bringing quality-as customer requirements-upstream in the product development process. The House of Quality (HOQ) is the first matrix of QFD concerning about the voice of customer and technical requirements. Interviews and questionnaires are conducted to assess these needs. Major requirements were translated into ingredients and process planning by QFD phases 2&3. Finally the appropriate composition of healthy rice cracker product was developed based on both QFD and experimental design techniques. The final product has been tested and compared to the current product in the market. © 2008 ICQR. |
