Abstract: The objectives of this research are to design and develop the grape jelly production process to meet the needs of the elderly. This research applied the Quality Function Deployment (QFD) to analyze and prioritize product specifications which deploy to the ingredients and manufacturing process characteristics. This research applied the principles of Advance Product Quality Planning (APQP) for planning and trial production and record the information in the Production Part Approval Process (PPAP) format. The research started with the application of the QFD technique to analyze requirements of the elderly on the target customers toward grape jelly products, the phase 1 of the QFD. There are 9 issues that should be considered for improvement such as (1)the safety certification standards for consumers (FDA), (2)conformance to the Good Manufacturing Practice (GMP), (3)the certified packaging, (4)selling price, (5)sensory characteristics, (6)the viscosity and toughness of product fitted to swallow of the elderly, (7)amount and ratio of grape juice, (8)low level of sugar and (9)essential nutrients. As for during phase 2 and 3 of the QFD analysis, the key ingredients and production processes of grape jelly for the elderly was found that the amount of grape juice, sugar, and carrageenan are important ingredients that needs to be improved. The research conducted improvement on adjusting the ratio of juice, sugar, and carrageenan using factorial design. This research applied the APQP principle and developed the documents in the PPAP form which have product characteristics in drawing format, and design failure mode and effect analysis. The Approve Vendor list system was created to prevent the purchase of unapproved substitutes used in the production process. The process flow chart design, PFMEA evaluation, and control plan were conducted to control each production process. The measurement system analysis (MSA) was assessed. The trial production has been produced and verified with quality by testing the microbial and heavy metal contaminants.
