Abstract: This quasi-experimental study used a two-group pretest-posttest design to compare mean pretest and posttest scores for vegetarian cuisine consumption practices of an experimental group receiving a bilingual multimedia innovation, and to compare the differences between the mean scores for vegetarian cuisine consumption between an experimental group and a control group over a 4-week period. The sample included 40 Karen people at risk of hypertension living in Bann Phra Bat Huai Tom, Lee district, Lamphun province, with 20 persons in the control group and 20 persons in the experimental group. The study was conducted during May to June 2023. The research instrument was a bilingual multimedia innovation about the practice of vegetarian cuisine consumption for Karen people at risk of hypertension developed by the researcher from a concept about the development of product innovation, and consisted of a bilingual education handbook (Thai-Karen language), a voice clip in Karen language, bilingual still image media (Thai-Karen language), and a questionnaire on the practice of vegetarian cuisine consumption. The content validity index was 0.9, and the Cronbach’s alpha coefficient of the questionnaire was 0.81. Descriptive statistics were used for data analysis and included paired t-test and independent t-test. The study results indicated that, for the experimental group, the mean posttest score (x ̅= 71.25, S.D. = 8.95) was higher than the mean pretest score (x ̅= 57.23, S.D. = 6.87), and higher than that of the control group (x ̅= 60.0, S.D. = 9.12) with statistical significance p < .001 and p < = .030 respectively Based on the study, it can be seen that the learning innovation on vegetarian cuisine consumption through bilingual multimedia could help Karen people at risk of hypertension, leading to practices in accordance with community principles and their way of life.
