Abstract: Crystal calcium oxalate is caused by the reaction between calcium and oxalic acid. It will be stored in a special cell which is called crystal idioblast in order to reduce the risk of toxicity and to control excessive calcium requirements of plants. Crystal calcium oxalate is present in plants and also can be found in local vegetables cooked in every household. This research aims to survey 20 different kinds of plant species and quantity of crystal calcium oxalate found in local vegetables in the Province of Chiang Mai. This research also aims to gather data to be used for high school education. The samples of 20 plant species of native vegetables were used to examine and draw comparison of the size and quantity of the crystal.By means of cutting off transversely, it has been discovered that 13 of the native vegetables contain calcium oxalate and 7 species of the native vegetables does not contain it. We can also group plants by its type of calcium oxalate such as druse, prisms, raphide and crystal sand. Another way of grouping plants is by knowing if the plant has plenty of calcium oxalate, moderate amount of calcium oxalate, less amount of calcium oxalate and plants with no calcium oxalate at all. Finally, take the results of this study to construct the Biology e-Learning courseware with video “Calcium Oxalate Crystals In Local Vegetables” for Muttayom Suksa 4 Students. The interviews and questionnaire from the students indicated that ICT courseware was appropriate in the good level.
